PROBLEM TO BE SOLVED: To provide a food material excellent in flavor, palate feeling, functionality, and digestibility through developing a using method of high amylose rice and ae rice.

SOLUTION: Rice powder as gelatinized starch contains 0.1-50 wt.% of milk casein. A method for producing the rice powder comprises mixing/heating high amylose rice and/or ae rice with cow milk and/or a milk processed product so as to gelatinize rice starch, and rapidly drying/crushing the product. Food and drink, and a food additive using the rice powder are also provided.
