The present invention provides a food extracting liquid with which food allergens in a food product can be extracted even when they are cooked and turned into a state that is difficult to be extracted, an allergen detection method using the extracting liquid and a kit, and specifically provides a simple detection method which uses a food extracting liquid free of 2-mercaptoethanol (2-ME) which is irritant and toxic, does not involve a boiling step and provides accurate detection results within a short period of time, and a kit. The present invention is characterized in that a food extracting liquid that includes thioglycerol and a solubilizing agent is used in order to extract food allergens from a food product. Accordingly, various allergen proteins including egg proteins existing in the poorly soluble state in baked confectionaries, rehydratable noodles and the like can be efficiently detected with good sensitivity from various processed foods. Furthermore, accurate detection can be achieved without showing
