The present invention relates to aronia-coated rice and a method for producing the same. According to the present invention, a rice surface is coated with a film containing an antioxidative component and anthocyanin of aronia so that antioxidative effects can be enhanced by intake of the coated rice. Aronia is used as extracted juice in most cases, and juice extraction byproducts left after juice extraction are discarded without utilization. The present invention relates to aronia-coated rice produced by the use of such aronia juice extraction byproducts obtained after the extraction and a method for producing the same. The aronia-coated rice production method according to the present invention includes: a step in which a juice extraction byproduct is obtained after aronia juice extraction； a step in which the juice extraction byproduct is dried with hot air at a temperature of 45 to 60 degrees Celsius； a step in which the dried juice extraction byproduct is ground to 1,800 to 2,200 meshes for aronia powder production； a step in which a mixture is produced by 0.5 to 5 parts by weight of the produced aronia powder being mixed with 100 parts by weight of alcohol； a step in which rice is immersed in the mixture； and a step in which the aronia-coated rice is obtained by the immersed rice being dried at a temperature of 40 to 55 degrees Celsius and the alcohol being volatilized.본 발명은 아로니아 코팅쌀 및 그 제조방법에 관한 것으로서 더욱 상세하게는, 쌀의 겉표면에 아로니아의 안토시아닌과 항산화성분을 함유한 막을 코팅하여 코팅된 쌀을 섭취하면 항산화효과를 높일 수 있는 아로니아가 코팅된 아로니아 코팅쌀 및 그 제조방법에 관한 것이다.아로니아는 주로 착즙한 즙으로서 이용되며 착즙 후 남은 착즙 부산물은 활용되지 못하고 버려진다. 본 발명은 이러한 착즙 후 발생한 아로니아의 착즙 부산물을 이용하여 제조한 아로니아 코팅쌀 및 그 제조방법에 관한 것이다.본 발명의 아로니아 코팅쌀의 제조방법은 아로니아를 착즙한 후 남은 착즙 부산물을 얻는 단계； 상기 착즙 부산물을 45~60℃에서 열풍 건조하는 단계； 상기 건조된 착즙 부산물을 1800~2200 매쉬로 분쇄하여 아로니아 분말을 생성하는 단계； 주정 100 중량부에 대하여 상기 생성된 아로니아 분말 0.5~5 중량부를 혼합하여 혼합물을 제조하는 단계； 상기 혼합물에 쌀을 침지하는 단계； 및 상기 침지된 쌀을 40~55℃에서 건조하여 주정을 휘발시켜 아로니아 코팅쌀을 수득하는 단계；를 포함한다.
