PROBLEM TO BE SOLVED: To provide a roasted wheat flour composition for fry food enabling production of very crispy fry food having crunchy palate feeling and crispy texture and causing little deterioration with time.

SOLUTION: The roasted wheat flour composition for fry food is obtained by mixing wheat flour with starch so that the ratio of the wheat flour to the starch is from (80:20) to (20:80), and roasting the mixture. The roasting is preferably carried out by heating at 120-160°C for 1-3 hours. The mixed flour contains the wheat flour composition for fry food.
