PROBLEM TO BE SOLVED: To provide a method for producing an easily and quickly eatable Pholiota processed product.SOLUTION: Provided is a method for producing a Pholiota processed product comprising: a pretreatment step for a Pholiota a filling step where the pre-treated Pholiota is filled into a container and a heat sterilization step where the Pholiota filled into the container is subjected to heat sterilization. The pretreatment step includes: a stage of washing the Pholiota a stage of performing boiling a stage of performing dehydration and a stage of performing pulverization. In the boiling stage, the washed Pholiota is added to boiled water, and heating is performed till it is re-boiled. The boiled Pholiota is immersed into iced water, and is thereafter subjected to a dehydration stage. The Pholiota passed through the dehydration stage is pulverized in the pulverization stage. Concretely, the Pholiota is pulverized with a food processor.The pre-treated Pholiota is filled into the container in the filling step. As the container, heat resistant and pressure resistant one such as a retort pouch and a can is used. The Pholiota filled into the container is subjected to the heat sterilization step.SELECTED DRAWING: NoneCOPYRIGHT: (C)2018,JPO&INPIT【課題】 簡易にかつすぐに食すことができるナメコ加工品の製造方法を提供する。【解決手段】 ナメコの前処理工程と、前処理したナメコを容器に充填する充填工程と、容器に充填したナメコを加熱殺菌する加熱殺菌工程とを含む。前処理工程において、ナメコを水洗する工程と、煮沸する工程と、脱水する工程と、粉砕する工程とを含む。ナメコの水洗工程において、複数回ナメコを水洗する。水洗したナメコは、煮沸工程に供する。煮沸工程において、水洗したナメコを沸騰水に添加し、再沸騰するまで加熱する。煮沸したナメコは、氷水につけて急冷し、その後脱水工程に供する。脱水工程を経たナメコは、粉砕工程において粉砕される。具体的には、ナメコをフードプロセッサーにより粉砕する。前処理したナメコを充填工程において容器に充填する。容器としては、レトルトパウチや缶などの耐熱・耐圧性のものを用いる。容器に充填したナメコは、加熱殺菌工程に供する。【選択図】なし
