PROBLEM TO BE SOLVED: To provide a freeze-dried noodle which is brought back into good condition for a short period of time, is adequately loosened and also has adequate flavor, and to provide a method for producing the same.SOLUTION: The method for producing the freeze-dried noodle comprises: a boiling step of boiling a noodle using a saline solution with a concentration of 0.3 wt.% to 5.0 wt.% an immersing step of filling a case with the boiled noodle, and adding water to the case to immerse the noodle in the water in the case a first freezing step of freezing the noodle in a state that the noodle is immersed in the water a second freezing step of adding a seasoning liquid to the frozen noodle, and freezing the whole and a freezing and drying step of freezing and drying the resultant product under reduced pressure.
