THE PRESENT INVENTION RELATES TO A METHOD OF REDUCING AFLATOXIN AND OCHRATOXIN IN PEPPERS, CHARACTERISED BY THE STEPS OF: APPLYING AN ALKALI HYDROXIDE AND AN OXIDISING AGENT TO THE PEPPERS TO PRODUCE PRE-TREATED PEPPERS THEN, HEATING THE PRE-TREATED PEPPERS TO A TEMPERATURE RANGING FROM 300 - 70° C FOR A TIME RANGING FROM 20 - 60 MINUTES AND SUBSEQUENTLY RINSING THE TREATED PEPPERS.
