PROBLEM TO BE SOLVED: To provide a fryer capable of suppressing the production of acrylamido in a fried product by cooling the fried product immediately after frying, which is discharged with a discharge conveyor.SOLUTION: The fryer 1 includes: the discharge conveyor 10 for discharging potato chips 4 from an oil tub 8 and a gas releasing part 12 for releasing gas for cooling the potato chips 4 placed on the discharge conveyor 10. The gas releasing part 12 includes a pair of blowers 40 for blowing air to the inner space of the discharge conveyor 10 from the both sides of the discharge conveyor 10. The air blown from the blowers 40 is released upward from the inner space of the discharge conveyor 10, so as to pass between the respective potato chips 4. The air cools the potato chips 4, which is taken out from the tub 8, from the lower part while passing the gaps of the potato chips 4. Thus, the potato chips 4 immediately after frying are efficiently cooled, thereby suppressing the generation of crylamido in the potato chips 4.COPYRIGHT: (C)2009,JPO&INPIT【課題】搬出コンベヤによって搬出されるフライ製品をフライ直後に冷却することにより、フライ製品中のアクリルアミドの生成を抑制することができるフライヤーを提供する。【解決手段】フライヤー1は、油槽8からポテトチップ4を搬出する搬出コンベヤ10と、搬出コンベヤ10上に載ったポテトチップ4を冷却するガスを放出するガス放出部12を備える。ガス放出部12は、搬出コンベヤ10の両側から搬出コンベヤ10の内側空間に送風する一対のブロワ40を備える。ブロワ40から送風された空気を搬出コンベヤ10の内側空間から上方に放出させることにより、空気をポテトチップ4の間を通るように流す。空気が、油槽8から上がったポテトチップ4の隙間を通りながらポテトチップ4を下方から冷却するので、フライ直後のポテトチップ4を効率的に冷却することができ、ポテトチップ4におけるアクリルアミドの生成を抑制することができる。【選択図】図1
