PROBLEM TO BE SOLVED: To provide jam with a fresh feeling that a blueberry originally has by which textures of both a jam liquid part and a particle part can be tasted by leaving particles of a blueberry.SOLUTION: Blueberries are washed, and the fruit is put into a cooker. The fruit is coated with saccharide and lemon juice, and is left unattended. The cooker is heated for boiling the fruit. Four minutes after the generation of the first bubble from the jam liquid is confirmed, heating of the jam liquid is ended, with a result that the yield rate of anthocyanin is improved and jam having a shape of particles left can be manufactured.COPYRIGHT: (C)2013,JPO&INPIT【課題】ブルーベリーが持っている本来のフレッシュ感のあるジャムを作る。ブルーベリーの粒を残し、ジャム液の部分と粒の部分の双方の食感を味わえるジャムをつくる。【解決手段】 ブルーベリーを洗浄し、果実を調理器の中に入れ、果実に糖類とレモン汁を絡めて放置し、調理器を加熱し煮、ジャム液から一番初めの気泡の発生を確認した4分後にジャム液への過熱を終了することで、アントシアニンの歩留まり率をよくし、粒の形を残すことを特徴とするジャムを作る。【選択図】図1
