PROBLEM TO BE SOLVED: To provide a fish meat heated-and-dried product having excellent in-mouth meltability, for example, a cut material from a dried fish or the like and to provide a production method thereof.SOLUTION: There is provided a cut material obtained from a fish meat heated-and-dried product.
