PROBLEM TO BE SOLVED: To provide a method for producing enzyme-treated lactic acid fermentation food product, in which sufficient lactic acid fermentation is enabled and which can impart favorable acid taste matching with material without deteriorating original color and flavor of fruits and vegetables, thereby solving a problem that although there have been growing desires for taking in vegetables, beans and fruits for health promotion, it is not easy to actually take a required intake of vegetables, beans and fruits, and the green smell and bitter taste particular to vegetables, beans and fruits are also the cause to prevent one from taking the intake.SOLUTION: The problem is solved by simultaneously performing enzyme treatment and fermentation treatment by lactic acid bacteria to food material.COPYRIGHT: (C)2016,JPO&INPIT【課題】健康増進目的での野菜類、豆類、果実類摂取の欲求は日々高まっているが、野菜類、豆類、果実類を実際に必要量摂取することは容易ではない。また、野菜類、豆類、果実類には特有の青臭味、苦味を有するものもありこれらも必要量の摂取を妨げる原因となっている。青果物本来の色や風味などを損なうことなく、充分に乳酸発酵を可能とし素材にあう好ましい酸味を付与することができる酵素処理乳酸発酵食品の製造方法を提供することを目的とする。【解決手段】食品素材に酵素処理と乳酸菌による成分発酵処理を同時に行うことで上記課題を解決する。【選択図】なし
