PROBLEM TO BE SOLVED: To provide a novel seedless dried prunus ume, food-containing prunus ume and seedless dried fruit which keep a shape with a cavity held inside without crush, and a method for manufacturing them.
SOLUTION: The method consists of a salting process for salting raw prunus ume, an initial drying process for drying prunus ume after the salting process, a maturing process for maturing prunus ume after the initial drying process, a seed-removing process for perforating prunus ume after the maturing process, removing a seed from a hole and closing the hole with air held inside, a preliminary drying process for drying prunus ume after the seed-removing process to 20% or less of moisture content, and a seed-removing and drying process for keeping a shape of prunus ume with a cavity produced inside by heating and drying prunus ume after the preliminary drying process with a microwave cooker.
