PROBLEM TO BE SOLVED: To provide solid milk having practical hardness by producing powder milk excellent in compression moldability.SOLUTION: Provided is a method for producing solid milk comprising: a gas dispersion step (S112) where prescribed gas is dispersed into liquid milk； a spray drying step (S114) where the liquid milk having passed through the gas dispersion step is sprayed, and the sprayed liquid milk is dried to obtain powder milk； and a compression molding step (S130) where the powder milk obtained through the gas dispersion step and the spray drying step is compressed to obtain a solid powder milk compression-molded product, and, in the gas dispersion step, the prescribed gas and the liquid milk are continuously mixed in a closed system.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】圧縮成形性に優れた粉乳を製造することで実用的な硬度を有する固形乳を製造する。【解決手段】固形乳の製造方法は，液状乳に所定の気体を分散させる気体分散工程（Ｓ１１２）と，気体分散工程を経た液状乳を噴霧し，当該噴霧した液状乳を乾燥させ，粉乳を得る噴霧乾燥工程（Ｓ１１４）と，気体分散工程及び噴霧乾燥工程を経て得られた粉乳を圧縮して固形状の粉乳圧縮成形物を得る圧縮成形工程（Ｓ１３０）とを含み，気体分散工程は，所定の気体と液状乳を密閉系で連続的に混合する。【選択図】図１
