PROBLEM TO BE SOLVED: To provide an oil and fat composition for layering food capable of providing a plastic oil and fat good in extensibility with dough and having chewy, a burned layering food being uniformly puffed and having floating with volume even with fold pastry, especially dough including filling inside, good in texture with crispy with small aging change, suppressed decomposition of burned product and good in melting in mouth, a plastic oil and fat, a dough and a burned product using the same.SOLUTION: It contains oil and fat having the content of trisaturated triglyceride of over 15 mass% and 35 mass% or less, mass ratio of symmetric type triglyceride (SUS) and asymmetric type triglyceride (SSU) in disaturated triglyceride (SUS/SSU) of 0.2 to 1.0, the content of disaturated triglyceride of 30 to 40 mass%, total amount of the disaturated triglyceride and trisaturated triglyceride of over 45 mass% and 65 mass% or less and the content of trisaturated triglyceride of 1.0 to 15 mass%.SELECTED DRAWING: NoneCOPYRIGHT: (C)2016,JPO&INPIT【課題】生地との伸展性が良好で、コシのある可塑性油脂を得ることができ、焼成した層状食品は、特に折りパイ、中でもフィリングを内部に包含した生地であっても均一に膨化し且つボリュームのある浮きが得られ、サクさのある食感が良好で、サクさの経時変化も小さく焼成品の崩壊も抑制され、口溶けの良好な層状食品用油脂組成物とそれを用いた可塑性油脂、生地及び焼成品を提供する。【解決手段】3飽和トリグリセリドの含有量が15質量%超35質量%以下、2飽和トリグリセリドのうち対称型トリグリセリド(SUS)と非対称型トリグリセリド(SSU)との質量比(SUS/SSU)が0.2~1.0、2飽和トリグリセリドの含有量が30~40質量%、2飽和トリグリセリドと3飽和トリグリセリドとの合計量が45質量%超65質量%以下、3不飽和トリグリセリドの含有量が1.0~15質量%である油脂を含有することを特徴としている。【選択図】なし
