PROBLEM TO BE SOLVED: To provide a method for producing freeze-dried jam obtained by freeze-drying jam an additive for freeze-dried jam to be used in producing the freeze-dried jam freeze-dried jam and restored jam obtained by impregnating water into the freeze-dried jam.
SOLUTION: Starch-blended jam is prepared by blending starch with jam in such a way that the amount of blended starch is at least 2.5 pts.wt. relative to 100 pts.wt. of the total of monosaccharides and disaccharides contained in the jam, and the prepared starch-blended jam is freeze-dried.
