PROBLEM TO BE SOLVED: To provide octopus dumplings or Okonomiyaki of texture such that they are easy to melt in the mouth without clinging regardless of crispy surfaces and soft, creamy content, not only just after being baked but also after being cooled or when reheated after cold or frozen storage.SOLUTION: This powder mixture for octopus dumplings or Okonomiyaki contains 1 to 30 pts.mass of acetylated oxidized starch for 100 pts.mass of cereal flours.
