PROBLEM TO BE SOLVED: To provide a processed food of fresh fish and shellfish that can be pulverized and be provided as a Chinese medicine or supplement, and also can be cut out in a stage before a return process to make the food capable of being eaten while being dried, and thereby can be easily eaten by the people such as senior citizens or children who are poor at masticatory force, and to provide a manufacturing method of the same.SOLUTION: A manufacturing method of fresh fish and shellfish smoked food comprises the steps of: obtaining fresh fish and shellfish (G); cutting out (C) them as needed in any stage among all steps; performing boiling (B1), cold water cleaning and draining water off on a first day, and then adding at least trehalose and salt in the boiled fish and shellfish and performing stirring (F) to be laid in a refrigerator overnight (M); if necessary, adding at least the trehalose and the salt in the boiled fish and shellfish and performing the stirring (F) to be laid in the refrigerator overnight (M) on a second day; draining water off and performing smoking by properly using a smoking material (S) to be exposed to cold air and dried (D1) on the second day or a third day, and performing cooling overnight (A); and performing exposure to the cold air and drying so as to be adjusted to a predetermined moisture (D2) on the third day or a fourth day.SELECTED DRAWING: Figure 1
