PROBLEM TO BE SOLVED: To provide an emulsifier having high emulsifying action and excellent safety to human body such as low toxicity and low skin stimulation, easily soluble in cold water on an industrial scale, giving an emulsion having excellent uniformity, stability and application feeling with a simple operation in high efficiency and suitable for emulsifying cosmetic products and foods, especially cosmetic products, and to provide a cosmetic product compounded with the emulsifier.
SOLUTION: The emulsifier contains a processed lactobacillus-fermented rice obtained by fermenting rice with a lactobacillus essentially in the absence of salt and applying gelatinizing treatment to the obtained lactobacillus fermented rice, or a combination of the processed rice with a thickener. The emulsifier is compounded to the cosmetic product.
