PROBLEM TO BE SOLVED: To provide an enzyme treated oil-in-water type emulsified seasoning containing livestock industry extract and oil, including fine emulsified grains, free lipid, glutamic acid or the like, and, in which, since, not only it is creamy and has a strong richness but also has an increased flavor derived from oil and an increased taste owing to glutamic acid, the flavor of various foods and seasonings can be improved by small addition, a method for producing the same, and a food material including the seasoning.SOLUTION: The fact that, by subjecting protein-containing livestock industry extract and oil to emulsification treatment and thereafter treating the same with protein degrading enzyme, an enzyme treated oil-in-water type emulsified having a creamy richness and strong flavor and taste can be produced has been found to complete this invention.SELECTED DRAWING: None【課題】 本発明は、畜産エキスと油脂とを含む酵素処理水中油型乳化調味料であって、微細な乳化粒子、遊離脂質、グルタミン酸等を含有しており、クリーミーでコク味が強いだけでなく、油脂に由来する香味、グルタミン酸による旨味が増強されているため、少量添加で様々な料理や調味料の風味を向上させることができる調味料、その製造方法、並びに該調味料を含む食品を提供する。【解決手段】 発明者らは、タンパク質を含む畜産エキスと油脂とを乳化処理した後、タンパク質分解酵素で処理することで、クリーミーなコク味、香味及び呈味が強い酵素処理水中油型乳化調味料を製造できることを見出し、本発明を完成した。【選択図】なし
