The present invention relates to a method for collecting sap from a tree. The method includes a collection stage and an analysis stage. In the analysis stage, the degree of cleanness of the collected sap is obtained, and the collection stage is terminated based on the obtained information. With this method, no sap is produced without the use of additives and heat treatment, but with good storage at room temperature.
