PROBLEM TO BE SOLVED: To shorten a leaving time in a method of obtaining a hardly water-soluble gel or hardly water-swellable product by heating, freezing or drying konjak.SOLUTION: The hardly water-soluble gel or hardly water-swellable product is obtained by leaving a proper water-containing mixture of a konjak material made by granulating finely pulverized powder with a polysaccharide, and an alkali substance, to stand at an adjusted temperature from the lower limit of unfreezing temperature of the mixture to the upper limit temperature of lower than 50°C, followed by heating, freezing or drying. Various hardly water-soluble or hardly water-swellable foods are obtained by mixing the processed product and another substance.COPYRIGHT: (C)2009,JPO&INPIT【課題】コンニャクを利用して加熱又は冷凍又は乾燥により水難溶ゲル又は水難膨潤性になる加工物を得る方法において、放置処理時間を短縮する。【解決手段】微粉化コンニャク粉を多糖類で造粒したコンニャク素材とアルカリ性物質との適当含水混合物を、温度条件として下限は該混合物が凍結しない温度、上限は50℃未満に調整し、放置処理後加熱又は冷凍又は乾燥することにより水難溶性ゲル又は水難膨潤性になる加工物を得、該加工物を他の物質と混合し、それを加熱又は冷凍又は乾燥することにより多種多様な用途のある水難溶化食品又は水難膨潤化食品として収得する。【選択図】なし
