PROBLEM TO BE SOLVED: To provide an improved modified whey protein-containing gel-like food.SOLUTION: This modified whey protein-containing gel-like food is obtained by heating a modified whey protein-containing raw material followed by cooling, and molding the product in a gel-like state. In more details, the food is obtained using as the raw material, a mixture of modified whey protein and a pasty food material, adding to the raw material, a deodorant food material (at least either one kind of onion powder, cyclodextrin, and tea extract) which reduces volatile component (heptanal) to be produced by heating modified whey protein, previously heating while stirring the raw material followed by pouring into a mold, heating the product followed by cooling, and molding the product in a gel-like shape.COPYRIGHT: (C)2010,JPO&INPIT【課題】改質乳清たんぱく質含有ゲル状食品の改良を目的とする。【解決手段】本発明では、改質乳清たんぱく質を含有する原料を加熱後に冷却してゲル状に成型した改質乳清たんぱく質含有ゲル状食品において、原料として改質乳清たんぱく質とペースト状の食材との混合物を用い、改質乳清たんぱく質を加熱することにより発生する揮発性成分(ヘプタナール)を減少させる消臭食材(タマネギパウダー、サイクロデキストリン、又は茶抽出物の少なくともいずれか1種)を原料に添加し、原料を撹拌しながら予め加熱した後に流し型に注入し、加熱後に冷却してゲル状に成型することにした。【選択図】図1
