The present invention relates to noodles of a ramen containing Allium hookeri and glutinous barley powder, soup base powder, and a method for manufacturing the same. Dough is produced by adding Allium hookeri powder and glutinous barley powder to wheat flour and starch and then adding water to the same. The dough is milled and cut. Allium hookeri noodles are produced by steaming and shaping the cut noodles, and frying the cut noodles in oil, and then cooling the cut noodles. Allium hookeri powder is mixed with seasoning and flakes, and syrup including starch, gelatin, and paste is mixed with the mixture. Afterwards, the soup base powder of the ramen is produced by molding, drying, and cooling the mixture obtained earlier. Therefore, the ramen of the present invention obtains a high score of a sensory evaluation in all aspects of preference such as flavor, texture, and elasticity of the noodles.
