To provide production methods of Sasa veitchii (Carr.) Rehd. fermentation material excellent in nutritional and bioactive functions, and to provide Sasa veitchii (Carr.) Rehd. fermentation material obtained thereby.SOLUTION: The production method of Sasa veitchii (Carr.) Rehd. fermentation material of the present invention comprises fermenting Sasa veitchii (Carr.) Rehd. leaves and/or stems in the presence of an aspergillus and a fermentation aid.
