A novel composition for delivering carotenoids (e.g. &alpha；- and &bgr；-carotene, lycopene) and/or other physiologically active ingredients to the colon of humans after ingestion and for producing liquid food compositions insusceptible to polyphenol-protein reactions can be obtained by encapsulating said active ingredients with pectin, in particular with low-methoxylated pectin.Yutulduktan sonra karotenoidleri (örneğin alfa ve beta-karoten, likopen) ve/veya diğer fizyolojik açıdan aktif bileşenlerin uygulanmasına yönelik insan kolonuna vermek ve polifenol-protein reaksiyonlarına karşı duyarlı olmayan sıvı gıda bileşimleri üretmek için yeni bir bileşim, pektinli bileşenler, özellikle düşük metoksile edilmiş pektin ile birlikte söz konusu aktif içerikler kapsüllenerek elde edilebilir.
