The present invention relates to a method for increasing the amino acid content of peanut sprouts in comparison with a control group, relates to a manufacturing method of peanut sprouts with the increased amino acid content in comparison with the control group, relates to peanut sprouts with the increased amino acid content manufactured by the method, and relates to a processed food containing the peanut sprouts. The method for increasing the amino acid content of peanut sprouts in comparison with a control group comprises the following steps of: (a) immersing a peanut seed under the dark condition to be germinated; and (b) irradiating the peanut seed germinated in step (a) with light emitting diode (LED) of the UV-B wavelength.본 발명은 (a) 땅콩 종자를 암조건에서 침종시켜 발아시키는 단계; 및 (b) 상기 (a)단계의 발아된 땅콩 종자에 UV-B 파장의 LED(light emitting diode)를 조사하는 단계를 포함하는 대조구에 비해 땅콩새싹의 아미노산 함량을 증가시키는 방법 및 대조구에 비해 아미노산 함량이 증가된 땅콩새싹의 제조 방법과 상기 방법에 의해 제조된 아미노산 함량이 증가된 땅콩새싹 및 상기 땅콩새싹이 함유된 가공식품에 관한 것이다.
