PROBLEM TO BE SOLVED: To provide a high-moisture sheet-like water-in-oil emulsified oil-and-fat composition enabling to obtain a danish pastry having good folding workability, inner layer condition, float and volume, and having moist palate feeling with good fit feeling in the mouth regardless of its high moisture and to provide a danish pastry using the composition.
SOLUTION: The high-moisture sheet-like water-in-oil emulsified oil-and-fat composition includes 30-50 wt.% of water content in the whole of the composition, and contains an emulsifier, a thickener and fibers. The danish pastry is obtained using the composition to prepare pastry dough, and baking the pastry dough.
