PROBLEM TO BE SOLVED: To provide a gas-containing oil-and-fat composition filled in a flexible container such as tube container, having improved palatable smoothness and easiness to be extruded from the flexible container, being imparted with shape retaining properties when discharged from the flexible container.SOLUTION: The gas-containing oil-and-fat food is made of a gas-containing oil-and-fat composition which includes a high melting point fat having a rising melting point of 50°C or higher, a low melting point fat having a rising melting point of 20°C or lower, oil-insoluble particles and emulsifier, which are filled in a flexible container. The fat content is 30 to 70 mass% relative to the total amount of the fat, the oil-insoluble particles and the emulsifier. The oil-insoluble particle content is 25 to 65 mass% relative to the total amount of the fat, the oil-insoluble particles and the emulsifier. The gas-containing oil-and-fat composition has a specific hardness. The measurement values related to the solid fat content of the gas-containing oil-and-fat composition by a specific method are 10 to 40% in temperature ranges of 20, 30, and 40°C, respectively. The measurement value at 40°C is higher than the measurement value at 20°C.COPYRIGHT: (C)2014,JPO&INPIT【課題】チューブ容器等の可撓性容器に充填した含気油脂組成物について、口当たりの滑らかさと可撓性容器からの押し出し易さを向上させ、かつ可撓性容器から吐出させた含気油脂組成物に吐出形状の保形性を賦与する。【解決手段】上昇融点50℃以上の高融点油脂、上昇融点20℃以下の低融点油脂、非油溶性粉体及び乳化剤を含む含気油脂組成物が可撓性容器に充填された含気油脂食品であって、油脂、非油溶性粉体及び乳化剤の合計量に対する油脂の含有量が30~70質量%、油脂、非油溶性粉体及び乳化剤の合計量に対する非油溶性粉体の含有量が25~65質量%であり、含気油脂組成物が特定の固さを有し、含気油脂組成物の固体脂含量が関係する特定方法の測定値が温度範囲20、30、40℃で10~40%であり、かつ20℃の測定値に対して40℃の測定値が高い。【選択図】図1
