PROBLEM TO BE SOLVED: To provide a rice saccharified liquid generally usable for various liquid foods such as Amazake, rice milk, and Makgeolli-like non-alcoholic beverage, and having smooth texture and refreshing taste without added flavor, without using a special appliance and applying added flavor such as Umami seasoning, and a method for manufacturing the same, and a liquid food having the rice saccharified liquid as the raw material.SOLUTION: A rice saccharified liquid has an amino acid concentration of 0.12-0.45 mass%. A method for manufacturing the same includes using protease having an endopeptidase activity. A liquid food has the rice saccharified liquid as the raw material.
