PROBLEM TO BE SOLVED: To provide a method of producing a flavor-containing granular composition that has strong satisfactory aroma and excellent aroma stability even after preservation, floats on water and quickly dissolves upon loading of water, has excellent flowability of powder, is less apt to cause blocking even in high humidity, and causes flavor release at a desirable timing.SOLUTION: A method of producing a flavor-containing granular composition includes: obtaining a mixture by mixing a flavor, saccharides having a melting point of 80°C-130°C, an acid material, and a carbonate and melting or semi-melting the saccharides by heating the mixture to temperature not less than the melting point of the saccharides and not more than 130°C without adding water to the mixture followed by cooling and solidification.COPYRIGHT: (C)2016,JPO&INPIT【課題】香りが強く良好で、保存後も香りの安定性に優れ、水への投入時に、水に浮いて素早く溶解し、粉末の流動性に優れ、高湿度下でもブロッキングを起こしにくく、さらには、フレーバーリリースが望ましいタイミングでおこる香料含有顆粒状組成物の製造方法を提供すること。【解決手段】香料、融点が80℃~130℃の糖類、酸性物質、および炭酸塩を混合して混合物を得、混合物に加水を行わずに、糖類の融点温度以上、かつ、130℃以下の温度に加熱して、糖類を溶融または半溶融後、冷却、固化することを特徴とする香料含有顆粒状組成物の製造方法。【選択図】なし
