PURPOSE: A producing method of a milk beverage is provided to add a sour taste agent to a milk-sugar solution containing a milk component, a sweetener, and soybean saccharide for improving the taste of the beverage. CONSTITUTION: A producing method of a milk beverage comprises the following steps: diluting milk components in purified water, and dissolving soybean saccharide before cooling at 1~20deg C for obtaining a mixed solution; adding a diluted sweetener into the mixed solution, and mixing at 1~20deg C to obtain a milk-sugar solution; mixing 100parts of milk-sugar solution by weight and 1~80parts of sour taste agent by weight, and mixing at 1~20deg C; and adding fruit juice into the milk-sugar solution containing the sour taste agent, and homogenizing.본 발명은 과즙을 함유하면서 안정성이 우수한 유음료를 제조하기 위하여 유당액에 산미제 희석액을 일정 조건하에 혼합하고, 이에 과즙을 첨가하는 유음료의 제조방법에 관한 것으로, 유단백질의 안정성이 높은 과즙 함유 유음료의 제조방법을 제공하고 나아가 음료의 안정성을 향상시켜 음용시 풍부한 식감 및 편의성을 제공함으로써 소비자 기호도를 증진시키는 효과가 있다.
