The present invention relates to a preparation method of resistant starch, comprising the extraction resistant starch from sorghum distilled residues. This method select sorghum distilled residues as raw materials. The sorghum distilled residues are compacted by double drum dryer forming mud, and add water, mix and stirr. The mixture of raw materials separate by centrifuge, and press filter. Dried it as high temperature to obtain a resistant starch. Sorghum distilled residues contain 5 to 8 % of the resistant starch. This process can enhance the resistant starch content of 15 to 31%.本發明係關於一種抗性澱粉之製備方法,尤其是指利用酒糟萃取抗性澱粉之方法,其係選用帶殼穀類經發酵的殘留物作為原料,將高梁酒糟碾壓形成酒糟泥,加水混合攪拌,再接續混和原料離心分離,經由細篩壓榨過濾後,最後再以高溫乾燥方式提取含抗性澱粉之酒糟澱粉。高梁酒糟內含有5~8%之抗性澱粉,藉此加工流程可將抗性澱粉含量提升至15~31%,實為一種快速、簡便且低成本之製備方法。
