The invention relates to a process for the preparation of soluble chitosan aggregates by fluid bed granulation. Said aggregates are characterised in that they are soluble in water even when the water is cold, without the aid of stirring or further physical and/or mechanical treatments. Due to this characteristic, the chitosan aggregate obtained with the process of the invention can be conveniently used, for example in oenology, as an antibacterial agent.
