PROBLEM TO BE SOLVED: To provide mixed flour for a baked wheat flour food which is capable of obtaining a baked wheat flour food improved in texture, especially Tako-yaki having crispy texture and Okonomi-yaki having puffy texture.SOLUTION: The mixed flour for a baked wheat flour food contains high-protein soft wheat flour obtained by milling and classifying wheat and soft wheat with 12 mass% or more of protein content, and has a sugar content of below 0-10 mass%.
