PURPOSE: Germinated black barley, and a processing method thereof are provided to offer the improved content of free amino acid, free sugar, and minerals in the black barley to users. CONSTITUTION: A processing method of germinated black barley comprises the following steps: washing black barley with water at room temperature(100); soaking the black barley in the water for 24 hours(200); separating the soaked black barley from the water, and germinating for 24 hours at 20-30 deg C(300); steaming the germinated black barley at 100-130 deg C for 5 minutes using a steamer(400); naturally drying the steamed black barley for 2 hours, and secondly drying the black barley for 8 hours at 40-60 deg C using a drier(500); and milling the dried black barley with a rice milling machine for 2 times(600).
