The present invention provides a sucrose benzoate composition and a preparation method thereof. The sucrose benzoate composition is obtained by formulating sucrose benzoate with carboxylate. The amount of carboxylate is preferably in the range of 0.001 wt% to 1 wt%, relative to sucrose benzoate. The sucrose benzoate will not get colored even under a heating condition. The preparation method of sucrose benzoate composition is characterized by including the following steps: mixing and dissolving sucrose benzoate and carboxylate in an organic solvent and/or water and removing the organic solvent and/or water from the mixture solution.本發明提供一種蔗糖苯甲酸酯組成物及蔗糖苯甲酸酯組成物之製造方法，該蔗糖苯甲酸酯組成物是在蔗糖苯甲酸酯中調配羧酸鹽而成，較佳是相對於蔗糖苯甲酸酯，羧酸鹽為0.001重量%以上且1重量%以下，該蔗糖苯甲酸酯組成物即使加熱亦不會著色，該蔗糖苯甲酸酯組成物之製造方法的特徵在於包括下述步驟：使蔗糖苯甲酸酯與羧酸鹽溶解混合在有機溶劑及/或水中之步驟；以及將有機溶劑及/或水從該混合溶液中去除之步驟。
