PROBLEM TO BE SOLVED: To obtain new fungal strains of Pleurotus cornucopiae var. citrinopileatus (Sing.) Ohira, capable of carrying out rotation having specific frequency by bottle culture throughout the year, free from disturbance of form of cap pileus, not causing warping of cap pileus even if cultured using a nutrient other than rice bran, short in culture period and having good taste and special aroma. SOLUTION: These new strains are Elm mush north fungus No.1 (FERM P-15101), Elm mush north fungus No.2 (FERM P-15102) and Elm mush north fungus No.3 (FERM P-15103) capable of carrying out rotations of 18-20 per year by bottle culture throughout the year, obtaining stable yield of fruit by forming fruit primordium after spreading a hypha to whole culture medium in bottle cells, free from disturbance of shape of cap pileus such as waving, etc., not causing warping of cap pileus even when cultured using a nutrient other than rice bran and have good taste and special aroma. These new strains are obtained by culturing Pleurotus cornucopiae var. citrinopileatus (Sing.) Ohira which naturally grows, collecting monospore, changing the monospore to monokaryotic hypha, mating the hypha and carrying out selection examination from the resultant many dikaryotic hyphae.
