PROBLEM TO BE SOLVED: To provide a method for increasing functional components in cereal embryo or cereal embryo-containing cereal flour which includes hydration means minimizing the amount of water to be added to raw material and also having no need to stir the raw material during hydration in order to increase the amount of gamma-aminobutyric acid in the cereal embryo or the cereal embryo-containing cereal flour having increased content of the functional components.

SOLUTION: The method for increasing functional components in cereal embryo or cereal embryo-containing cereal flour includes: a humidification step of humidifying the raw material which contains cereal embryo and a drying step of drying the raw material after the humidification step, or a heat-radiating step of radiating the heat of the raw material: wherein the raw material is brought into contact with humidified air having a humidity of 90 wt.% or more at a temperature of 60-70°C to be humidified during the humidification step.
