<;P>;PROBLEM TO BE SOLVED: To provide a novel emulsifier derived from food yeast, having high safety, and independently exhibiting high emulsifiability and emulsion stability; a water-soluble composition using the emulsifier and containing a fat-soluble substance; and its production method. <;P>;SOLUTION: The emulsifier comprises a composite having sugar and protein in a culture solution derived by culturing the food yeast as an active ingredient. Further, the water-soluble composition comprises the emulsifier and the fat-soluble substance.
