PROBLEM TO BE SOLVED: To provide a method for freeze processing in order to obtain water spinach (Ipomoea aquatica) retaining the green color of the water spinach and excellent in preservability. ! SOLUTION: A method for processing water spinach includes: a dividing process (step S4) of dividing the water spinach into its leaves and stems; a first heating process (step S5) of heating the divided stems for 60 s in salad oil, refined oil, corn oil, soybean oil, sesame oil, rapeseed oil, or safflower oil at 170-190掳C; a second heating process (step S5) of heating the divided leaves for 30 s in salad oil, refined oil, corn oil, soybean oil, sesame oil, rapeseed oil, or safflower oil at 150-170掳C; and a freezing process (step S7) of freezing the water spinach leaves and stems after the first and second heating processes.
