The present invention relates to a method for extracting cypress essential oil, and more specifically, to a method for extracting cypress essential oil, capable of selectively extracting cypress essential oil through a low-temperature low-pressure manner of extracting only a cypress essential oil component by using a difference in the boiling point between the cypress essential oil component and water and a high-temperature high-pressure manner of extracting cypress essential oil in a steam state containing a cypress essential oil component, and uniformly maintaining the temperature and pressure of a distilling tank by supplying a cooler with a high-temperature high-pressure cypress essential oil component or steam, which is generated in the heating procedure of the distilling tank for a long time, followed by condensation and recollection. Accordingly, the present invention comprises: a first step of collecting cypress, separating branches or leaves therefrom, and washing the branches and leaves with water； a second step of putting the washed branches and leaves in a distilling tank storing a predetermined amount of water, and heating the distilling tank for 6-10 hours by steam generated through a heating unit； a third step of supplying a condenser with a cypress essential oil component or steam containing a cypress essential oil component in the distilling tank, which is generated by heating the distilling tank； a fourth step of supplying a storing tank with the cypress essential oil component or the steam containing a cypress essential oil component, which is condensed by the condenser, followed by storage for a predetermined period, thereby generating a cypress essential oil liquid or cypress essential oil water； and a fifth step of supplying an aging tank with the cypress essential oil liquid or cypress essential oil water stored in the storing tank, followed by aging for a predetermined period.본 발명은 편백정유 추출방법에 관한 것으로서 더욱 상세하게는 편백 정유성분과 물의 끓는점 차이를 이용하여 편백 정유성분만
