The invention relates to a gelatin product with a core component, wherein the core component is partly or completely encased by a gelatin gel. The gelatin gel is made of a homogenous casting compound which contains the following components dissolved in water: - 3 to 20 wt.% of gelatin with an average molecular weight, determined by means of gel chromatography, of at least 130 kDa, preferably at least 145 kDa, the proportion of the molecular weight fraction over 100 kDa being at least 35 wt.%, preferably at least 45 wt.%； - up to 60 wt.%, preferably 15 to 60 wt.%, of glucose syrup with a viscosity of less than 1000 mPa·s, preferably less than 800 mPa·s, measured with a dry matter content of 80 wt.% and at a temperature of 60 °C； and - up to 60 wt.%, preferably 15 to 60 wt.%, of sucrose, wherein the casting compound has a dry matter content of at least 70 wt.%. The invention further relates to a method for producing such gelatin products.
