The invention relates to methods for pasteurizing fluid products using various types of equipment. Pasteurization is performed in a thermal processing apparatus, which allows for processing at a specific mechanical power of at least 50 watts per kilogram of product. Pasteurization is performed in one stage, or two stages, or three stages, or four stages, wherein the first stage is conducted at a temperature not exceeding 43°C, the second stage is conducted within a temperature range of between 43°C and 85°C, the third stage is conducted within a temperature range of between 85°C and 102°C, and the fourth stage is conducted within a temperature range of between 102°C and 120°C following processing, the product is packaged in an aseptic packaging. The technical result consists in significantly shortening the process cycle, wherein product preparation requires no more than one and a half hours from the loading of the raw materials to readiness for pouring into containers.Linvention concerne des procédés de pasteurisation de produits fluides utilisant divers équipements. La pasteurisation est effectuée dans un appareil de traitement thermique assurant un traitement avec une puissance mécanique spécifique dau moins 50 W par kilogramme de produit. La pasteurisation est effectuée en un stade, ou en deux, trois ou quatre stades, le premier stade étant mis en oeuvre à une température inférieure ou égale à 43°C, le deuxième stade étant mis en oeuvre à une température entre 43°C et 85°C, le troisième stade étant mis en oeuvre à une température entre 85°C et 102°C, le quatrième stade étant mis en oeuvre à une température entre 102°C et 120°C, le produit après traitement étant placé dans un emballage aseptisé.
