The present invention relates to a method for preparing barley hardtack containing burdock and to barley hardtack containing burdock prepared thereby. The method for preparing barley hardtack containing burdock comprises the following steps: (S1) preparing barley hardtack by molding a hardtack base using barley as a main ingredient into a hardtack shape and baking the resultant product (S2) preparing a burdock extract or a burdock powder solution and (S3) coating the burdock extract or the burdock powder solution on barley hardtack surfaces and drying the resultant product. The barley hardtack prepared according to the present invention: is a bread having functions of burdock and barley, thereby improving functionality and preference by exquisitely combining the burdock and barley and has antioxidant and anticancer effects of the burdock while allowing a customer to be full and having an increased earthy flavor due to the barley, and thus increases the preference, thereby not only being able to be used as a perfect meal, but being expected to have a weight loss effect.
