Kneading composition comprises a flour obtained by crushing grains treated with ozone, a marine salt i.e. sodium chloride, and water, where the composition comprises = 1.8 wt.% of salt related to the weight of the flour. Independent claims are included for: (1) a bakery product obtained by fermentation and/or baking of a kneading composition; (2) use of a flour obtained by grinding grain treated with ozone for preparing bread products with reduced salt; and (3) preparing bread products comprising making flour by grinding the washed and moistened wheat grains, preparing a kneading composition by mixing the flour with salt and water, and fermenting and/or baking the kneading composition.
