PURPOSE: A red pepper drying method and an apparatus thereof are provided to uniformly blow hot air to the upper and lower sides of red pepper which is transferred by an air-permeable conveyor.CONSTITUTION: Red pepper is transferred to an air-permeable conveyor(30) moving toward one direction. 90-110°C steam is supplied to the lower side of the red pepper for steaming the red pepper. 90-110°C hot air is supplied to the red pepper for drying. 70-90°C hot air is supplied to the firstly dried red pepper from the lower side of the conveyor. 40-70°C hot air is supplied to the secondly dried red pepper from the lower side of the conveyor. Air at a room temperature is supplied to the red pepper from the lower side of the conveyor for cooling.
