The present invention relates to a method for manufacturing a red ginseng flake snack containing active ingredients in a large amount. More specifically, bitter taste of red ginseng is reduced while active ingredients of the red ginseng are maintained in order to enhance functionality. The method includes: (1) a first step of steaming and drying red ginseng after placing the ginseng cleaned thoroughly; (2) a second step of slicing the red ginseng with a slicer after drying the red ginseng with hot air; (3) a third step of placing the sliced red ginseng on a grill made of stainless steel mesh; (4) a fourth step of coating the sliced red ginseng with honey and drying the red ginseng; (5) a fifth step of grinding collected debris of the red ginseng using a pin crusher; (6) a sixth step of uniformly sprinkling red ginseng powder, firstly ground in the fifth step, on both side of red ginseng slices placed on the double-sided grill; and (7) a seventh step of freeze-drying the red ginseng by using a freeze-drier after quenching and freezing the red ginseng in order to maintain the shape of the red ginseng.본 발명은 활성성분을 다량 함유한 홍삼 플레이크 스낵의 제조방법에 관한 것이다.
