PROBLEM TO BE SOLVED: To obtain a fat and oil composition for coating that can efficiently produce a food product which does not look white-opaque nor take on a dull color tone and which has excellent quality in texture and flavor. SOLUTION: The fat and oil composition for coating is produced by blending 0.1-20 pts.wt. extremely hardened oil of a high erucic acid rapeseed oil and additionally 0.01-10 pts.wt. lecithin as an emulsifier per 100 pts.wt. liquid oil with a solid fat having a solid fat index of 5 or less at 10 deg.C. A puffed rice cake and a puffy snack food are produced by using this fat and oil composition.
