PROBLEM TO BE SOLVED: To provide a gelatinous food product which is fat emission type which is formed by blending protein and fat, which is a small amount and has high calories (200 kcal or more per 100 g), and which is suitable for older people and persons who have difficulty of manducation and swallowing corresponding to UDF classification 3.SOLUTION: The gelatinous food product which is fat emission type and which can be easily swallowed achieves target hardness by performing crosslinking treatment to a soybean protein in an oil-in-water type emulsification slurry which is an incomplete emulsion state by using a protein crosslinking enzyme, and preferable oil oozing when the food product is mashed by a tongue.
