PURPOSE: A producing method of red pepper paste using rice decomposition products instead of starch syrup is provided to use saccharified rice products or koji to obtain the rice decomposition products, and prevent the browning of the red pepper paste. CONSTITUTION: A producing method of red pepper paste using rice decomposition products instead of starch syrup comprises the following steps: fermenting and aging a mixture containing gelatinized farinaceous raw materials, koji, salt water, red pepper powder, and fermented soybeans; and adding saccharified rice products or the rice decomposition products to the fermented and aged mixture. The saccharified rice products is obtained by saccharifying gelatinized rice using a diastatic enzyme, or by saccharifying a liquefied product of the gelatinized rice using the diastatic enzyme.
